Roast chicken and guacamole sandwich
Ingredients:
- 2 chicken breast halves, boneless and skinless
- 4 thin slices of bacon
- 1 wand
- a few lettuce leaves
- ½ teaspoon cumin, oregano
- 1 avocado
- 1 handful of coriander
- 3 green onions
- 4 cherry tomatoes
- 1 red hot pepper
- 1 lime
- olive oil
- salt and pepper
Method of preparation:
Put salt, pepper, cumin and oregano on the chicken pieces. Then they are pounded until thinned, and the spices and herbs enter the meat. Heat up the grill. Fry the bacon slices until they become crispy.
Remove to a paper towel to absorb excess fat and set aside. Fry the meat on both sides until browned.
The fat left by the bacon will give extra flavor to the chicken breast. Meanwhile, make the guacamole paste: mix avocado, coriander, green onion, hot pepper, cherry tomatoes, salt, pepper, lime juice and a few tablespoons of olive oil in a blender. When the meat is browned on both sides, take it out and let it rest. Take the baguette, preheated in the oven, and cut lengthwise into two parts.
Brush both sides with olive oil. Spread the guacamole paste on the baguette.
Cut the steak into strips and add to the sandwich, and place the bacon slices on top. The sandwich is closed.
